"No modification, however exotic it may be, could change our habit to taste a cup of steaming coffee just made with our traditional coffee machine or with the new pod method: but, in the world, many cultures declare their faith to their receipes. No one of us will change our minds, but nothing prevents us from "tasting" other people's habits"

For each person, pour into the special Turkish jug (a copper recipient with large bottom, narrow neck and long handle) a little cup of water, two little spoons of coffee and 2 of sugar. When the ingredients are mixed, let the mixture boil on a slow fire. When a creamy and dense foam will appear on the top, remove the jug from the fire until the creamy thickness disappears.
Repeat this procedure on the fire for 2 or 3 times, then remove definitively from the fire.
Now, as a rite, pour a part of the creamy thickness into each guest cup and then add the remaining coffee. The creamy thickness will emerge on the surface (Kaimak). Do not stir the drink in the cup. Before offering the drink to the friends, let the Kaimak descend to the bottom of the cup by pouring with delicacy a couple of cold water drops. Now the tasty and excellent drink is ready.
