Coffee roulades

Mix 240 gr. of flour, 2 tea spoons of artificial leaven and a pinch of salt; sift and knead with 60 gr. of butter.
Mix half cup of milk, 1/4 cup of coffee, 3 spoons of molasses and some castor sugar.
Mix the two compounds and roll out the pastry on a baking-pan. Cover the pastry with 60 gr. of butter and dust with a spoon of powder chocolate and sugar. Roll up and cut some slices to be placed on a baking-pan (far one from the other) and cooked for 10 minutes.


Ham with coffee sauce

Mix 40 gr. of flour, 40 gr. of butter, and 1/2 litre of milk, add an abundant pinch of salt and one of sugar, 25 gr. of mustard, and 2 spoons of strong coffee. Pour the sauce in a heat-resistant pan with 750 gr. of ham cut into cubes and 6 hard-boiled eggs cut into slices. Put the pan at bain-marie before serving.


Pork roast with coffee sauce

Put in a casserole 2/3 of cup of strong coffee, 1/3 of cup of butter, 2 spoons of English sauce, 1 spoon and a half of mustard, 1 spoon of lemon juice and 1 spoon of coffee. Mix and heat until the butter is melted. Use part of this sauce to paint the pork roast during the cooking and pour the remaining sauce into sauce-holders to dress the roast slices.

Brazilian meat

In a casserole let brown with butter, 1,5 Kg of fillet cut into little cubes, keeping stirred; add some water, a clove of garlic, 3 onions thinly cut, 2 spoons of salt. Close with a cover and let cook until the onion softens. Remove the meat and the onion from the casserole, leaving the sauce. Put 1/4 of cup of flour inside the casserole with the sauce, 1 cup of dry white wine, a little spoon of marjoram, half little spoon of pepper, 1 cup of strong coffee. Stir slowly until the sauce is dense. Put the meat and onion in the casserole again and let boil on slow flame.


Fried bananas with coffee and rum sauce

For the sauce: mix 1 cup of flour, 2 spoons of artificial leaven, 1 little spoon of salt, 1/4 of cup of sugar.

Sift the above compound and mix with 1/3 of cup of milk and 2 little spoons of melted butter up to obtain a dense compound. Melt in a casserole on a slow flame 1 cup of sugar. Stirring, add 1 cup and a half of strong coffee, 2 spoons of potato flour and an other half cup of cold coffee. When everything is amalgamated, add it to the compound previously prepared and let boil, stirring, until when the sauce is dense. Remove from the fire and add 2 spoons of butter and 2 little spoons of rum.
The obtained sauce can be served with 2 or 3 bananas cut into three or four pieces that, floured and dipped in a beaten egg with flour, must be fried in hot oil for 5 minutes, turning them for a perfect browning.
